Tips on Cooking, Baking With Heart-Healthy Spreads

Part-I

Heart-healthy margarine

A tasty, buttery flavor-

Good for cooking and baking.

Heart-healthy?

A cholesterol-free soft tub spread –

made from 50-60% vegetable oils-

Two grams or less of saturated fat and

no trans fat.

Make sure to level the cup or spoon.

When sautéing,

use medium heat to maintain the flavor and

to avoid burning the spread.

 

For baking,

chill the spread in the freezer before

measuring it if the recipe calls for

creaming it with sugar.

When melting a spread for baking,

It melts quickly.

In the microwave-

Three tablespoons of tub spread melts in

Fifteen seconds,

Butter takes thirty seconds.

 

Recipe for heart-healthy spread?

1/3 cup chilled buttery Spread

one cup sugar, one egg,

Mild molasses one tablespoon-

Same vanilla extract,

Some salt, flour take cup one-

Rolled oats one and a half cup-

Don’t forget baking soda half spoon-

Same for ground cinnamon, and raisins-

Not to mention 3/4 cup sliced almonds.

 

Preheat oven to 350 degrees.

Line baking sheet with parchment paper and

set aside.

Use an electric mixer on medium speed

to cream buttery spread with

sugar until it’s pale and fluffy,

for about two minutes.

Mix in egg, molasses, vanilla and salt.

Using a rubber spatula,

stir in flour, oats, baking soda and cinnamon until -

almost blended.

Add raisins and almonds,

mixing gently until

ingredients are combined.

Drop the dough tablespoon one -

at a time onto the baking sheet,

spacing them three inches apart.

 

Bake for twelve minutes or -

until cookies are golden brown.

Cool for one-minute on the pan, then -

transfer to a wire rack and -

cool completely, normally, naturally.

 

Part-II

Cookies

Cookie- a family favorite.

These cookies tend to be chewy while -

still maintaining a 'meaty' texture.

The number one tip is to not over cook.

2 cups plain flour-

½ teaspoon salt and baking soda, and-

same cup white sugar,

170g butter, melted-

Brown sugar one cup,

vanilla extract one tablespoon-

One egg and yolk-

chocolate chips two cups.

 

Pre-heat oven to about 315oF or 165oC.

In a medium bowl,

sift together the flour, salt and baking soda.

Set aside.

In another medium bowl,

beat together the butter and sugars.

Beat until mixed thoroughly and creamy.

Add in the egg, egg yolk and vanilla.

Beat until well blended.

 

Mix in the dry ingredients until combined.

And stir in the choc chips.

Drop spoon sized pieces of the dough -

onto the prepared cookie trays allowing about -

Two inches between for spreading.

 

Bake for about ten minutes or -

until the edges just start to color.

Cool on the cookie tray for a few minutes and -

then transfer to wire racks to cool completely.

Quickly hide them away or -

Start again making another one new.

 

Part-III

Made from part-skim milk,

a surefire party idea.

Easy, creative, absolutely delicious.

Roll cheese slices around fresh fruits or raw vegetables;

Add cubes to salads and pastas-warm or cool;

Shred on vegetables and into sauces;

Enhance stuffings for meat, poultry or fish;

Enrich egg dishes;

Shred into mashed or smashed potatoes;

Grill with peppers, squash, potatoes;

Top burgers-beef, turkey or salmon;

Make hors d'oeuvres, wraps and sandwiches galore.

Twelve clean asparagus spears,

Same slices of lean ham,

One cup grated cheese-

Boil asparagus in lightly salted water a minute.

With slotted spoon,

dip spears in ice water to preserve color;

drain on paper towels.

Wrap a slice of ham around-

each spear and place on baking sheet-

lightly sprayed with oil.

Sprinkle spears liberally-

Serve immediately.

Place on grilled country bread brushed with olive oil and

garlic and topped with chopped tomatoes plus a bit of sea salt, if desired.
